This Mushroom Thoran is a classic South Indian stir-fry made with sun-dried oyster mushrooms, fresh coconut, and fragrant spices. Light, aromatic, and naturally wholesome, it’s a perfect accompaniment to steamed rice or traditional Kerala-style meals.

1 cup Sun-Dried Oyster Mushrooms (rehydrated and finely chopped)
Soak in warm water for about 30 minutes before use. These mushrooms add earthy depth and a tender bite to the dish. -
½ cup grated coconut
Fresh coconut adds richness and gentle sweetness. Unsweetened desiccated coconut can be used if fresh is unavailable. -
1 tsp mustard seeds
Releases a nutty aroma and subtle crunch when tempered. -
2 dried red chilies
Adds heat and color. Adjust quantity or remove seeds for milder spice. -
Curry leaves

1 tbsp coconut oil

Heat coconut oil in a pan over medium heat. Add mustard seeds and allow them to splutter. -

Add the chopped, rehydrated oyster mushrooms. Stir well and cook for 5 minutes until softened and well coated with spices. -
Finish with Coconut
Add grated coconut and salt. Mix well and cook for another 2 minutes, allowing flavors to come together.
