Mushroom Masala Curry

Ingredients

  • 1 cup Sun-Dried Shiitake Mushrooms
    Rehydrated in warm water for 20–30 minutes and chopped into bite-sized pieces. Sun-dried shiitake mushrooms bring an intense umami depth and meaty texture to the curry.

  • 2 Onions (finely chopped)
    Forms the flavor base of the curry, adding natural sweetness and richness when caramelized.

  • 2 Tomatoes (pureed)
    Fresh tomato puree adds acidity, color, and body to the sauce.

  • 1 tbsp Ginger-Garlic Paste
    Adds warmth, aroma, and a classic savory foundation.

  • 2 tbsp Oil
    Use vegetable, canola, or coconut oil for best results.

  • 1 tsp Cumin Seeds
    Releases a warm, earthy aroma when tempered in hot oil.

  • 1 tsp Turmeric Powder
    Adds golden color, mild earthiness, and health benefits.

  • 1 tsp Red Chili Powder
    Adjust to taste. Kashmiri chili powder may be used for milder heat and vibrant color.

  • 1 tsp Garam Masala
    A fragrant spice blend that adds depth and complexity.

  • ½ cup Coconut Milk or Cream
    Creates a smooth, rich, and well-balanced curry. Use cream for extra indulgence.

  • Fresh Coriander Leaves (for garnish)
    Adds freshness and a bright finishing note.


Method

  1. Heat oil in a wide pan over medium heat. Add cumin seeds and allow them to splutter for a few seconds until aromatic.

  2. Add the finely chopped onions and sauté for 5–7 minutes until golden brown, stirring occasionally.

  3. Stir in the ginger-garlic paste and cook for 1–2 minutes until fragrant.

  4. Add turmeric powder, red chili powder, and garam masala. Cook for about 1 minute, stirring continuously to bloom the spices.

  5. Pour in the tomato puree and cook for 5–8 minutes until the mixture thickens and oil begins to separate.

  6. Add the rehydrated shiitake mushrooms and mix well. Pour in the coconut milk and bring to a gentle simmer.

  7. Cook for 8–10 minutes, stirring occasionally, allowing the mushrooms to absorb the flavors.

  8. Taste and adjust seasoning if required. Remove from heat and garnish with fresh coriander leaves.


Serving Suggestion

Serve hot with steamed rice, naan, or flatbread. This shiitake mushroom curry pairs beautifully with simple grains, making it a satisfying and nourishing meal.
