These Yogurt-Marinated Milky White Mushroom Skewers are rich, flavorful, and beautifully spiced. Made with sun-dried milky white mushrooms and a classic yogurt-based marinade, this dish delivers a perfect balance of smoky, tangy, and warm Indian spices—ideal for grilling, baking, or serving as a party starter.


🛒 Ingredients

  • 1 cup Sun-Dried Milky White Mushrooms (rehydrated)
    Sun-dried to intensify their umami flavor, then rehydrated to restore their chewy texture. Soak in warm water for about 30 minutes before use.

  • ½ cup yogurt
    Acts as a creamy, tangy base for the marinade and helps tenderize the mushrooms. Use plain, unsweetened yogurt or Greek yogurt for a thicker coating.

  • 1 tsp ginger-garlic paste
    Adds aromatic depth and enhances the overall flavor profile.

  • 1 tsp turmeric powder
    Brings warm, earthy notes, vibrant color, and natural anti-inflammatory properties.

  • 1 tsp red chili powder
    Adds heat and color. Adjust to taste; Kashmiri chili powder works well for milder spice.

  • 1 tsp garam masala
    A fragrant blend of warming spices that elevates the dish with depth and complexity.

  • 1 tbsp lemon juice
    Brightens the marinade and balances the richness of yogurt and spices.

  • Salt to taste

  • Skewers (wooden or metal)
    If using wooden skewers, soak in water for 30 minutes before grilling.


🧑🍳 Instructions

  1. Marinate the Mushrooms
    In a bowl, combine yogurt, ginger-garlic paste, turmeric, red chili powder, garam masala, lemon juice, and salt.
    Add the rehydrated mushrooms and mix well until evenly coated. Cover and refrigerate for at least 1 hour (up to 4 hours for deeper flavor).

  2. Skewer & Prepare
    Thread the marinated mushrooms onto skewers. Optionally alternate with bell peppers, onions, or cherry tomatoes for added color and flavor.

  3. Grill or Bake

    • Grill: Preheat to medium-high heat and grill for 10–15 minutes, turning occasionally, until golden and lightly charred.

    • Bake: Preheat oven to 200°C (400°F) and bake on a lined tray for 20 minutes, flipping halfway.

  4. Rest & Serve
    Remove from heat and allow the skewers to rest for a couple of minutes before serving.


🌿 Serving Suggestion

Serve hot with fresh mint chutney and lemon wedges. The cool, herby chutney perfectly balances the smoky, spiced mushrooms.
